The Producer
Founded in 1991, Domaine David Duband was born from the transformation of a former cooperative supplier into one of Burgundy’s most precise and expressive domaines. Under David Duband’s stewardship, the 17-hectare estate is now certified organic and vinifies all red wines with whole bunches since 2008. His wines are served in many Michelin 3-star restaurants and celebrated for their purity and elegance.
Origin & Production
Sourced from the prestigious Gevrey-Chambertin appellation in the Côte de Nuits. The wine is made from 100% Pinot Noir, with fermentation using whole clusters to enhance structure and aromatic complexity. Aging is carried out in oak barrels with minimal intervention to preserve the natural expression of the terroir.
Tasting Notes
Appearance: Intense garnet with cherry-red highlights.
Nose: Expressive notes of black fruits and subtle spices, with delicate oak.
Palate: Fresh and vibrant, with a clear, structured mouthfeel and fine tannins. The finish is long and well-balanced, reflecting classic Gevrey character.
Serving
Serve at 16–17 °C after brief decanting.
Food Pairing
Perfect with lamb terrine, escargots, rabbit in mustard sauce. Also pairs beautifully with duck breast, roast pigeon, veal with mushrooms, or soft-ripened cheeses such as Époisses or Mont d’Or.
